Agriculture: Selected Online Textbooks
Soil, Plant and Atmosphere : Concepts, Processes and Applications
This textbook presents the concepts and processes involved in the soil-plant-atmosphere system as well as its applications in the water cycle in agriculture. Although reaching the frontier of our knowledge in several subjects, each chapter starts at the graduation level and proceeds to the post-doctoral level. Its more complicated subjects, as math and physics, are well explained, even to readers not well acquainted with these tools. Therefore, it helps students read, understand, and developing their thoughts on these subjects. Instructors also find it an easy book with the needed depth to be adopted in courses related to Soil Physics, Agricultural Management, Environmental Protection, Irrigation and Agrometeorology. It serves also as “lexicon” to engineers and lawyers involved in agricultural, environmental cases.

Principles of Agronomy for Sustainable Agriculture
This textbook explains the various aspects of sustainable agricultures to undergraduate and graduate students. The book first quantifies the components of the crop energy balance, i.e. the partitioning of net radiation, and their effect on the thermal environment of the canopy. The soil water balance and the quantification of its main component (evapotranspiration) are studied to determine the availability of water to rain fed crops and to calculate crop water requirements. Then it sets the limitations of crop production in relation to crop phenology, radiation interception and resource availability (e.g. nutrients).
Sustainability: A Comprehensive Foundation
With “Sustainability: A Comprehensive Foundation”, first and second-year college students are introduced to this expanding new field, comprehensively exploring the essential concepts from every branch of knowledge – including engineering and the applied arts, natural and social sciences, and the humanities.

Nutrition & Food Science: Selected Open Textbooks
Food Analysis
The book is ideal for undergraduate courses in food analysis and is also an invaluable reference to professionals in the food industry. General information chapters on regulations, labeling, sampling, and data handling provide background information for chapters on specific methods to determine chemical composition and characteristics, physical properties, and objectionable matter and constituents. Methods of analysis covered include information on the basic principles, advantages, limitations, and applications. Sections on spectroscopy and chromatography along with chapters on techniques such as immunoassays, thermal analysis, and microscopy from the perspective of their use in food analysis have been expanded.
Food Safety, Sanitation, and Personal Hygiene
Food Safety, Sanitation, and Personal Hygiene is one of a series of Culinary Arts open textbooks developed to support the training of students and apprentices in British Columbia’s foodservice and hospitality industry. Although created with the Professional Cook, Baker and Meatcutter programs in mind, these have been designed as a modular series, and therefore can be used to support a wide variety of programs that offer training in foodservice skills.
Meat Cutting and Processing for Food Service
This book is intended to give students a basic understanding of the various types of meat and poultry used in the food service industry, and of how the terminology used by retail, wholesale, and food service customers varies.
